A specialist in Cordon Bleu, head chef Alfonso Peliganga has been in the business for 28 years working in five-star establishments before taking the helm at the Black Marlin.

In just over 2 years he has changed up the menu to incorporate his own fusion of flavours noting a new twist on a classic favourite, the Cape Malay curry.
