Known for its luxury, sophistication and excellence, 54 on Bath’s Level Four Restaurant lives up to the hotel’s reputation beautifully. This winter, the restaurant’s team is embracing the cold and using their culinary skills and technology to deliver exciting and fresh experiences through its winter menu, which executive chef Matthew Foxon describes as “taking diners on a food adventure”.
“The menu features hearty comfort elements, exciting flavour combinations, some playfulness, and, as has become the tradition at Level Four, sustainable sourcing of the best-quality seasonal ingredients,” says Matthew.
Hailing from Durban but with English parents, Matthew is known for his passion for producing traditional British food, but with a distinct African twist. Level Four’s winter menu manages to carry this passion through while still packing some surprising (and delightful) punches.
Beginning with the starters, there are Level Four favourites like the lobster bisque and also newer choices like the hearty han hock terrine. Both delicious and exciting, Matthew is proud that the menu is “pushing the envelope a bit – we’re trying new dishes and seeing what our clientele responds well to. We know that most of them cook well at home; they are discerning and have high expectations when they dine out. We want to excite and delight them with our intriguing flavour combinations, textures, and dishes”.
Moving on to the main course, the menu is packed with the kind of winter warmers that’ll make leaving the house on a chilly evening completely worth it – think dry-aged Jersey rib on the bone, Dukkha-spiced ostrich fillet, and the indescribably delicious porcini-and-cauliflower risotto, which you’ll be dreaming about for weeks afterwards.
And, of course, no true winter indulgence would be complete without a delectable dessert, which Matthew and his team have covered with dishes like dark chocolate fondant with brandy ice cream and coffee and mint panna cotta.
Though Matthew sits proudly at its helm, Level Four’s brilliance must be credited in part to the 15 chefs who all work under him, bringing their creative ideas together to create unforgettable dishes. With so much culinary genius at play, make sure you don’t miss out on this year’s winter menu.
